Serving Food Olympic Style
In the last ten years, dining in Beijing has undergone a fantastic transformation: diners have the same culinary choices today that they’d find in any large city in the world, plus representatives of every culinary tradition in China can be found in its capital, from the sweet and sour delights and seafood of South China to the meaty dishes of the North and West and the colourful sizzling dishes of Southwest China. Beijing is becoming known around the world for its foods’ excellence and variety, where East meets West in sumptuous ways. For Olympic athletes, Olympic organizers have promised a menu that will offer the best in Chinese delicacies. Chefs from across the country have recommended about 1,000 time-honoured local dishes for organizers to choose from, and Chinese food could account for up to 30 percent of the Olympic cuisine.
As the city counts down to the opening of the Games, some local restaurants have even branded themselves along sports lines:
The city offers a vast array of restaurants, ready to cater to almost every possible desire, from inexpensive street-side xiaofanguan (small eateries) to elegant, five-star gourmet restaurants. Some caution may be required for eating on the street, but as a general rule follow the locals. Almost any nightspot or bar in Beijing offers everything from snacks to elaborate meals, rewarding the adventurous with good food and entertainment in one spot. Beijing’s restaurants usually do not require tipping or service charges, although service charges are found in some of the larger, more expensive hotel restaurants, usually about 15 percent. Opening times are usually 11 a.m.–2 p.m. and 5–10 p.m., but increasingly, popular places and watering holes operate almost around the clock. Menus may not have photos of featured dishes or English translations; bring a friendly translator or use our helpful list. In a pinch, look about the restaurant until you see something you want to try and point it out to your waiter who will be happy to help.

As the name suggests, royal cuisine consists of the recipes and dishes of the imperial kitchens, dating from the time of the Qing Dynasty (1644–1911). Originating from the regional cooking of the Manchu and Han peoples, the cuisine pays equal attention to the quality of its ingredients as to its design. Dishes that have survived retain much of the culinary art of the royal kitchens, both lightly-flavoured and exquisite. They are now often served by descendants of chefs who worked in the imperial palace. Often, this is a time that will allow you to sample some of the cultural dining practices of olden times, with “strict” rules observed from where to sit at a table to when to begin dining and drinking. The Man–Han Quanxi, a feast of Manchu and Han courses, was originally designed as a court banquet. It included 108 dishes that had to be eaten over three days, and there are some who do, usually on special family occasions. Old Beijing had many high-ranking officials who demanded that regional homemade cooking be served to the imperial courts. Regional recipes were collected in the capital and survived much historical tumult. The cuisine favours natural ingredients, exquisite condiments, long cooking times and intricate cooking utensils. Some of them are cooked in private homes, and reservations are necessary because of space limitations. The Tanjia Restaurant is the best example of Beijing’s imperial cuisine and provides a seafood-rich combination of Cantonese and Beijing cuisines. After the founding of the People’s Republic, Premier Zhou Enlai asked that the restaurant move to the Beijing Hotel, the best hotel in China at that time. Essential to your Beijing dining experience is a brief tour of the many establishments offering Peking roast duck (Beijing kaoya), a delicious, lightly smoked, rich meal complimented by pancakes, dipping sauce, vegetable filling and irresistible slivers of juicy meat, fat and crispy skin (sometimes served first, a delicacy). After basting in a secret concoction of sweetened sauces, the ducks are roasted in a “hanging fruit-tree” oven for up to 50 minutes. They come out looking golden brown and juicy. A chef will then delicately slice it up for you by your table, making sure each piece includes at least a sliver of the duck’s crispy skin. The Chinese consider this the finest part of the duck. Every duck is sliced into 100–120 pieces. Dishes made of different parts of the duck are also worth trying. The Quanjude Roast Duck Restaurant leads the popular duck front in Beijing, while the Bianyifang Restaurant offers another way of roasting duck that is also delicious, but do not be deterred, kaoyadian (roast duck restaurants) can be found throughout the city at reasonable prices, and roast duck is also served at many ordinary restaurants. A taste of Peking roast duck is every bit as important as a visit to Tian’anmen Square during your stay in Beijing. When autumn comes to Beijing and the weather cools, hotpot is a firm favourite. Mongolian and Sichuan styles dominate the city’s hotpot scene. Sichuan hotpot is spicy whereas the Mongolian version features a clear broth and dipping sauces, such as sesame. Many restaurants offer a split pot, half for those who like very spicy fare, half for those who prefer something tamer. Some Mongolian hotpots are not spicy at all. Standard ingredients include slivers of beef and chicken in addition to the staple lamb. Vegetables, mushrooms and various kinds of tofu are also popular. The pot itself is traditionally made of brass, with a central column that holds hot charcoal that boils the stock. Once boiling, the stock is used to quickly cook a range of ingredients. After a few seconds, the thinly sliced meats and vegetables are ready to eat, often after being dipped in a smooth sesame sauce that is delicious and incredibly filling. Plus, it’s a great way to spend time with family and friends. Donglaishun is the most famous lamb hotpot restaurant in the city.

As a culinary capital, Beijing has it all! The strong flavours of Shandong cuisine are dominated by spring onion and garlic, while Zhejiang and Jiangsu cuisines feature delicately seasoned, light-tasting blends of seafood and vegetables. Tea has been an integral part of Chinese culture for centuries. Beijing is China’s most important distribution centre for tea, with a great selection from different parts of the country. For foreign tourists, the most convenient place to buy quality tea in Beijing is at Wuyutai, located beside KFC at the south end of Wangfujing Dajie. Long ago, teahouses were the centre of social activity and bubbled with the chatter of people from all walks of life. In the old teahouses, noblemen, imperial officials, touts and peddlers chose their teas carefully and caught up on the day’s events. Today, teahouses in China still have the same function but with not quite so much bustle. In many teahouses in Beijing, tea rituals are taught by serene ladies. In the Lao She Teahouse, Peking Opera and face-changing performances can also be enjoyed. Some teahouses are famous for fragrant, tea-infused dishes.
