Trendy & Talented Culinary Mind

A man’s greatest achievements begin in the kitchen, so they say. For Philippe Lagraula, it’s just another day of racking his brain to create a new, more innovative  “palate” to create food designs that will endear him to a new, more demanding and trendier generation.

Passionate about food since his childhood, Lagraula’s culinary thirst brought him to the well-known Institut Paul Bocuse- Hôtellerie et Arts Culinaires. He has worked with some of the greatest culinary minds such as: Michel Troisgros from Roanne, Michel Bras from Laguiole and Nicolas Le Bec from Lyon.

In December 23, 2004, the journey of his life began when he returned to his native hometown Dax and opened his own restaurant, the Une Cuisine en Ville. Countering Southwest cuisine, known for authenticity and tradition, with his own unique approach to contemporary cuisine, Lagraula remarked “Une cuisine ludique, provocante, contemporaine en phase avec ma generation,” which means: “A cooking that is more playful, more provocative, more contemporary and in phase with my generation.”

On March 2006, in tribute to his unique taste and technical variations, he was bestowed a Michelin One Star rating at the age of 26, officially making him the youngest chef in history ever to achieve this honour. The Director of the Michelin Guide, Jean-Luc Naret, dedicated the ‘Heart Preference’ to Lagraula’s restaurant.

As a farmer’s son, Lagraula has experienced the hard work and difficulties involved in producing good crop and meat products. He learned to respect the products he uses. The key to Lagraula’s food is how he best uses local products and ingredients to discover a whole new taste, with extreme precision of cooking timing and great difficulty of culinary techniques, touching the cuisine in a different way.

InterContinental Beijing Financial Street is proud to present chef Philippe Lagraula’s contemporary cuisine, exclusively, for the first time in China from March 25 to April 5, 2007, at the Steak Exchange.

The Steak Exchange features high-end dining, overlooking bustling Financial Street, and especially chef Lagraula’s specialty five-course set menu beginning at 688 yuan per person, paired with Domaine du Tix fine wines from southeastern France.
