Have shuizhu yu and Your Oil Too!

The Hongjingyu Restaurant was the first to serve "water-boiled" fish (shuizhu yu) in Beijing, but it’s also the first to present customers with a plastic bottle containing the oil that was used to cook the fish, which customers can take home following their meal.

Hongjingyu opened its seventh franchise in the Shangdi area in late summer 2005 and introduced this cooking-oil conservation practice. Food safety and security were hot topics in 2005, and, since shuizhu yu is actually cooked in oil, some diners had asked the restaurant how it handled its waste cooking oil. To ease customer concerns, Hongjingyu came up with a unique solution, a first in Beijing's restaurant industry, by bottling the oil used in a specific meal.

Since its opening in 1996, the Hongjingyu restaurant group has been an innovator and pioneer, and since it brought shuizhu yu from a village in Chongqing Municipality to Beijing, the dish has become a prime offering in nearly all the city’s top Sichuan restaurants.

The newly opened Shangdi franchise, with a southern China ambience highlighted with a stone bridge, a Chinese patio and calligraphy, can accommodate 300 diners. Each table is equipped with ATM and wireless Internet access points.
