“Celestial” Chef

2005/03/31

Along with hotels the world over, Beijing’s top counterparts undergo renovations of different scale on a regular basis. Often it involves guest rooms themselves, or a new look for restaurants and other facilities. Now, with its Celestial Court kitchen renovated, the St. Regis has brought in top chef Tse Kwok to mastermind the new culinary facility.

As the hotel’s delighted general manager commented: “We’ve long been seeking a chef whose stature matches Celestial Court and the hotel as a whole. Fortunately we now have Chef Tse Kwok”. Tse, from a large family of cooks, has won many awards in major competitions, including at the prestigious Hong Kong Food Festival. These included for Chinese Hot Cooking and Chinese Food Promotion.

He started his career in 1970 in Hong Kong, and soon held positions as executive chef at various top-class hotels and restaurants around Asia and in the United Arab Emirates, Malaysia, Manila, South Korea and Sri Lanka. Among his career highlights was the preparation of dinner for China’s former President Jiang Zemin, and the former Prime Minister of Malaysia, Dr. Mahthir.

Now Chef Tse’s total concentration is on producing his very best dishes for guests at St. Regis’s Celestial Court, where new menus have been introduced.

During April and May, Celestiral Court is featuring authentic Cantonese cuisine. Diners will get a 30 percent reduction on a la carte dishes.
