The new look of Cuisine Gallery was finished by French designer Philippe Ollendorff and new dishes are presented by the new French chef Jean Marc Perrigon, who has twenty-nine years of wide culinary experience from Egypt, Turkey, the United States, the Caribbean, the Middle East, and French Polynesia. Chef's Recommendation: Spinach salad golden flower & chick liverIngredients: Baby spinach, 150-gram Chicken liver, 80-gram White wine, 5-cl Brandy, dash Cherry tomato, 100-gram Balsamic vinegar, dash Onion, 20-gram Olive oil, 5-cl Demie glace, oil, salt, pepper, yellow flower and 2 salted puff pastry stick Preparation: 1. Clean the chicken liver, remove all the nerve and green part (bladder), marinate with the white wine and brandy; 2. Then chopped the onion in small cubes, clean the yellow Chrysanthemum flower and separate the petals; reserved in ice water until serving; 3. Clean and wash the spinach under water to remove the sand and bad leaves. Sauteed the chopped onion with olive oil in a pan, and add the chicken liver, salt and pepper, sauteed very fast for two minutes, over cooking will make them dry; 4. Finish by adding balsamic vinegar, let it reduce, then add a spoon of demie glace. Then rectify the seasoning. For service: Put the spinach in a bowl, mixed them well to make them tired (soft). Arrange the spinach in a centre of plate, add the sautéed liver on the spinach, decorate with yellow flower and cherry tomato, and finish with the puff pastry stick.
