Spring Cake: Messenger of Spring

The arrival of Spring sees virtually every family in China making - you've guessed it--Spring Cake (chunbing) to mark the change of season. This year, however, has been slightly different in that after weeks of largely blue skies, Spring seems to have arrived early--though there remains the chance of a cruel final flourish of snow and bitter winds. No matter: chunbing was the culinary order of the day for most everyone, both to greet Spring in the traditional way and as a food so popular that it has also been widely adopted as an everyday snack.
